Junior Sous Chef – Peruvian Specialty

About the role

We are seeking a passionate Junior Sous Chef with experience in Peruvian cuisine to support daily kitchen operations in our hotel restaurant. You will work closely with the Sous Chef to ensure authentic Peruvian dishes are prepared to the highest standards.

Key responsibilities

• Assist in the preparation of à la carte and buffet menus, ensuring consistency with hotel recipes and standards.
• Conduct daily shift briefings and maintain clear communication with kitchen staff in the Sous Chef’s absence.
• Monitor product rotation in chillers to minimize waste and ensure proper stock management.
• Maintain cleanliness and upkeep of work areas, utensils, and equipment, following safety and sanitation policies.

Required profile

• Previous experience in the culinary field with a focus on Peruvian cuisine.
• Journeyman’s papers or international equivalent.
• Strong interpersonal and problem‑solving abilities, able to work under pressure.
• Fluent in English; additional languages are a plus.

Required skills

• Knowledge of traditional Peruvian recipes and cooking methods.
• Computer literacy in Microsoft Windows applications.
