Production Manager – Potato & Snacks Manufacturing

About the role

We are looking for an experienced Production Manager to lead the operations of a potato and snack manufacturing facility in Baghdad. The role requires deep hands‑on knowledge of potato processing, snack production, and food safety standards to ensure safe, efficient, and cost‑effective output.

Key responsibilities

• Plan, organize and supervise daily production activities across the entire potato/chip line.
• Achieve production targets for volume, quality, efficiency and cost.
• Manage the full process flow: receiving, sorting, washing, peeling, cutting, blanching, frying, seasoning, cooling and packaging.
• Monitor and improve productivity, yield and Overall Equipment Effectiveness (OEE).
• Develop production schedules based on demand, inventory and capacity.
• Optimize use of manpower, machinery, raw materials and other resources.
• Control raw material consumption, minimise waste and variances.
• Ensure compliance with HACCP, GMP and all food‑safety procedures.
• Coordinate with QA/QC to resolve quality issues and customer complaints.
• Work closely with Maintenance to maintain high equipment availability and plan preventive maintenance.

Required profile

• Extensive hands‑on experience in potato processing and snack‑food manufacturing.
• Proven track record of meeting production targets and improving efficiency.
• Strong knowledge of food‑safety standards, HACCP and GMP.
• Ability to lead and develop production teams in an industrial environment.
