Senior Captain – Fairmont Gold

About the role

The Senior Captain at Fairmont Gold leads the food‑and‑beverage outlet, ensuring every guest receives personalized, high‑quality service in line with Accor standards. You will be the visible face of the venue, driving excellence during your shift and supporting the team to deliver memorable experiences.

Key responsibilities

• Deliver exceptional, personalized service and promptly address guest requests, concerns, and complaints.
• Supervise daily outlet operations, including opening, closing, and side duties, ensuring the venue is ready and maintained throughout service.
• Coordinate table assignments, monitor service flow, and verify food and beverage presentation standards.
• Maintain cleanliness, hygiene, and organization, complying with HACCP, food‑safety, and local health regulations.
• Lead, motivate, and coach Captains, Waitstaff, and Hostesses, providing performance feedback and fostering teamwork.
• Handle inventory control, stock requisitions, and support cash‑handling and POS procedures as needed.

Required profile

• Diploma or degree in Hospitality Management or related field (preferred).
• 3–5 years of food‑and‑beverage experience in a luxury or upscale hotel.
• 1–2 years of supervisory experience in restaurant operations.
• Excellent communication, interpersonal, and leadership abilities.
• Strong knowledge of food‑and‑beverage service standards and hygiene regulations.
• Good command of English; additional languages are a plus.

Required skills

• POS systems – Micros or Simphony.
• HACCP and food‑safety compliance.
