Junior Sous Chef - Peruvian Specialty

About the role

A hotel belonging to the Accor network is looking for a passionate Junior Sous Chef with experience in Peruvian cuisine to assist in daily kitchen operations. The successful candidate supports the Sous Chef in food preparation, quality control and team supervision, and helps deliver an authentic Peruvian dining experience through knowledge of traditional recipes and cooking methods.

Key responsibilities

• Ensure consistent preparation of all food items for a la carte and/or buffet menus according to hotel recipes and standards
• Offer professional, friendly and proactive guest service while supporting colleagues
• Conduct daily shift briefings for kitchen colleagues in the absence of the Sous Chef
• Maintain awareness of standards and expectations among all kitchen colleagues
• Liaise with the Outlet Chef on guest feedback
• Rotate products in chillers to minimise wastage and spoilage
• Know all menu items, daily features and promotions
• Keep work areas, utensils and equipment clean and maintained
• Follow kitchen policies, procedures, service standards and safety and sanitation policies
• Perform other duties as assigned

Required profile

• Previous culinary experience required; prior experience with Opera or a related system is an asset
• Journeyman's papers or international equivalent required; a culinary diploma is an asset
• Fluency in English; additional languages are a plus
• Experience is an asset

Required skills

• Knowledge of Peruvian cuisine and traditional recipes
• Computer literacy in Microsoft Windows applications is an asset
• Strong interpersonal and problem-solving abilities
• Ability to work under pressure in a fast-paced environment and as part of a team
