Kitchen Manager

About the role

Marasi Food & Beverage Services is seeking an experienced Kitchen Manager to lead the Heart of House at its Al Beiruti BLVD branch in Abdali, Amman. You will be responsible for overseeing food production, quality, cost control and the kitchen team to ensure every plate meets the Al Beiruti standard.

Key responsibilities

• Lead daily Heart of House operations, maintaining food quality, presentation and consistency in line with brand standards.
• Control food cost and COGS through portion control, standard recipes, ordering, receiving and inventory management.
• Ensure high food safety, hygiene and HACCP standards and lead internal and third‑party audits.
• Coordinate the pass and keep front‑of‑house and back‑of‑house working smoothly during service.
• Hire, onboard, train, coach and appraise the kitchen team, and manage scheduling with the Restaurant Manager.
• Collaborate with Purchasing to guarantee efficient ordering and issuing of supplies.
• Contribute to new recipe development, menu ideas and recommend equipment or production improvements.
• Prepare regular reports on costs, quality, audits and incidents for management.

Required profile

• Diploma in Culinary Arts or Food Services Management.
• Minimum 10 years of professional kitchen experience.
• Strong knowledge of HACCP, food safety, sanitation, food cost control and kitchen equipment.
• Valid PIC (Person in Charge) food safety certificate.
• Proven leadership, team management and scheduling abilities.
• Calm, organised decision‑maker who works well under pressure and pays close attention to detail.
• Good command of English and Arabic.
• Flexibility to work nights, weekends and public holidays.
