Chief Steward

About the role

The Ritz-Carlton in Amman is looking for a Chief Steward to manage the daily kitchen utility operations and staff. The role covers dish room operations, night cleaning, back dock cleaning and maintenance, banquet plating and food running, and supervising kitchen employees not actively engaged in cooking. It is a full-time management position.

Key responsibilities

• Manage day-to-day operations: order and manage supplies, schedule events and activities, monitor material inflow and maintain equipment, china, glass and silver.
• Supervise dishroom shifts and coordinate banquet plating and food running with the Banquet Chef and Banquet Maitre'd.
• Purchase supplies, manage inventories within budget, conduct china, glass and silver inventories, and control food, equipment, smallware and liquor stock.
• Interact with vendors and Health Department representatives, and ensure employees hold required food handling and sanitation certifications.
• Comprehend budgets, operating statements and payroll reports, schedule employees, track time and attendance, and manage payroll administration.
• Ensure compliance with Food & Beverage policies, inspect work areas, and enforce breakdown procedures for banquets, restaurants, room service and the employee cafeteria.
• Lead the kitchen team, guide performance, recruit, hire, promote and appraise staff, and handle discipline and performance issues.
• Focus on guest satisfaction, attend meetings with executives and peers, and help the department meet its budget and performance goals.

Required profile

• High school diploma or GED, or a 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration or a related major.
• 4 years of experience in procurement, food and beverage, culinary or a related field, or 2 years of experience with a 2-year degree.
