Executive Chef

About the role

The Ritz-Carlton is hiring a full-time Executive Chef in Amman, Jordan, responsible for the overall success of daily kitchen operations. The chef leads the kitchen management team, manages all food-related functions and supervises all kitchen areas to deliver a consistent, high-quality product, while improving guest and employee satisfaction and maximising financial performance.

Key responsibilities

• Lead the kitchen management team, give direction to day-to-day operations and supervise cooks and workers in food preparation
• Set and maintain goals for the culinary function, including performance, budget and team goals, and manage controllable expenses such as food cost, supplies, uniforms and equipment
• Develop menus, monitor the quality of raw and cooked food, present dishes and ensure compliance with food handling and sanitation standards
• Ensure employees hold required food handling and sanitation certifications and maintain purchasing, receiving and storage standards
• Deliver exceptional customer service, handle guest complaints and use guest feedback to improve service
• Manage human resources: coach and mentor staff, train kitchen associates on cooking and plating, run performance appraisals and progressive discipline in line with SOPs
• Work with the Banquet Chef and Catering department on food knowledge and menu composition

Required profile

• High school diploma or GED, or a 2-year accredited degree in Culinary Arts, Hotel and Restaurant Management or a related major
• 6 years of culinary, food and beverage or related experience, or 4 years with a degree
