Cost Controller – F&B Operations

About the role

Al Maysarah Holding is looking for an experienced Cost Controller to design, implement and manage cost‑control and inventory systems for its food and beverage operations across Jordan and Iraq. The role will be hands‑on, requiring you to build processes from the ground up and ensure they are fully operational before new restaurant openings.

Key responsibilities

• Design and launch a comprehensive F&B cost‑control and inventory‑management system.
• Establish item masters, units of measurement, stock categories, par levels and inventory procedures.
• Develop recipe costing, menu costing, standard costs, yields and portion‑control standards.
• Set up purchasing, receiving, storage, transfers, production, wastage and stock issuance processes.
• Integrate cost‑control processes with ERP and restaurant POS systems.
• Create policies, SOPs, approval controls and reporting templates for all outlets.
• Conduct stock counts, investigate variances and implement corrective actions.
• Analyse food costs, COGS, consumption, waste, supplier pricing and profitability.
• Prepare management dashboards and regular cost reports.
• Support new restaurant openings and train cross‑functional teams on approved procedures.

Required profile

• Bachelor’s degree in Accounting, Finance, Hospitality Management or related field.
• 5–7 years of F&B cost‑control experience, preferably in multi‑outlet restaurant chains.
• Proven track record of establishing cost‑control and inventory systems from scratch.
• Strong knowledge of inventory management, recipe costing, menu engineering, COGS, yield analysis and variance control.
• Experience with restaurant openings and implementation of SOPs and internal controls.
• Excellent command of Arabic and English.
• Willingness to travel between Jordan and Iraq as required.

Required skills

• Advanced proficiency in Microsoft Excel.
• Experience with ERP systems.
• Familiarity with inventory management software.
• Knowledge of restaurant POS systems.
